Albuquerque's Finest
At NATEAVO, every loaf tells a story — from our stone-milled flours and slow-fermented starters to the hands that shape them. This is baking as it should be: patient, honest, and deeply rooted in Albuquerque.

Our Story
NATEAVO was born from a simple conviction: that the bread on your table should be made with intention, not convenience. In the high desert of Albuquerque, where the light changes everything, we found our calling.
Every morning, our bakers arrive before dawn to build each loaf by hand — wild-fermented sourdoughs with crusts that shatter, laminated pastries layered with butter and patience, and a curated selection of local groceries that honor the Southwest.
We source from New Mexico farms, mill our own flour, and let time do what machines cannot. The result is food that tastes like it was made for someone you love.

What We Make
Wild-fermented sourdoughs, country loaves, and specialty grains — each baked to order with NM-milled flour and hours of patient proofing.
Croissants, pain au chocolat, danishes — built layer by layer with European butter and the kind of technique that only comes from doing it every single day.
A carefully selected market of New Mexico staples — small-batch hot sauce, native grains, artisan cheeses, and provisions that celebrate the Southwest.
